Snow Crab Recipes
Preparation time: 20 min
Cooking time: 15 min
Servings: 16 Crab Cakes
Ingredients:
160 ml (2/3 cup) mayonnaise
1 egg, lightly beaten
60 ml (1/4 cup) Dijon parsley
½ tsp of Tabasco
1 package of approximately 450g (1 lb) of snow crab meat
160 ml (2/3 cup) panko breadcrumbs
Vegetable oil
1 tsp lemon juice
1/8 tsp smoked paprika
1 lemon, cut into quarters
Instructions:
Preheat the oven to 200°C (400°F).
Line a baking sheet with parchment paper. In a large bowl, whisk together 125ml (1/2 cup) of mayonnaise with the egg, parsley, Dijon mustard, and Tabasco. Add the crab and gently stir to combine.
Taking 1 tablespoon of the crab mixture at a time, shape it into 2.5 cm (1 inch) thick croquettes and coat them with panko breadcrumbs.
Place the croquettes on the baking sheet, spacing them about 1 cm apart. Lightly spray or brush the tops with oil. Bake in the center of the oven for 10 to 12 minutes. Flip the croquettes and continue cooking until they are lightly golden about 5 minutes. Let them cool on the baking sheet for 5 minutes before transferring them to a serving dish.
For the spicy mayonnaise: whisk together the remaining mayonnaise, lemon juice, and smoked paprika. Serve the crab cake with mayonnaise and lemons.
